- ¾ cup (150g) granulated sugar
- ¼ cup (60ml) vegetable oil

- 1 ½ cups (190g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt

Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 loaf pan or line with parchment paper.
- Melt butter in a small saucepan over medium heat. Stir constantly until it foams, settles, and turns nutty brown with hazelnut aroma (5-7 minutes). Remove from heat and pour into a heatproof bowl to cool for 10 minutes.
- In a large mixing bowl, mash bananas with a fork until mostly smooth with a few lumps.
- Add cooled brown butter, sugar, vegetable oil, egg, and vanilla to the bananas. Whisk until smooth and combined.
- Add flour, baking soda, and salt to the wet mixture. Gently fold with a spatula or wooden spoon until just combined. Do not overmix.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes. If the top browns too quickly after 45 minutes, tent loosely with aluminum foil. Test for doneness with a toothpick inserted into the center.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Ensure bananas are very ripe (spotty/black) for maximum sweetness and moisture. Do not overmix the batter to avoid a dense texture. Brown butter can burn quickly, so watch it closely. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, substitute butter with vegan butter, egg with a flax egg, and sugar with maple syrup.
