  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 loaf pan or line with parchment paper.
  2. Melt butter in a small saucepan over medium heat. Stir constantly until it foams, settles, and turns nutty brown with hazelnut aroma (5-7 minutes). Remove from heat and pour into a heatproof bowl to cool for 10 minutes.
  3. In a large mixing bowl, mash bananas with a fork until mostly smooth with a few lumps.
  4. Add cooled brown butter, sugar, vegetable oil, egg, and vanilla to the bananas. Whisk until smooth and combined.
  5. Add flour, baking soda, and salt to the wet mixture. Gently fold with a spatula or wooden spoon until just combined. Do not overmix.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes. If the top browns too quickly after 45 minutes, tent loosely with aluminum foil. Test for doneness with a toothpick inserted into the center.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
