Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish with butter or non-stick spray.
- In a large mixing bowl, combine peaches, 1/2 cup sugar, cinnamon, ginger, lemon juice, and cornstarch. Toss until peaches are evenly coated.
- Pour the peach mixture into the prepared baking dish and spread evenly.
- In a smaller bowl, whisk together flour, baking powder, salt, and 3 tablespoons sugar.
- Cut the cold, cubed butter into the flour mixture using a fork or pastry cutter until it resembles coarse crumbs with pea-sized butter pieces.
- Slowly pour in heavy cream or buttermilk, stirring gently until the dough just comes together. Do not overmix.
- Drop spoonfuls of biscuit dough over the peach mixture, leaving some gaps for syrup to bubble up.
- Sprinkle the mixture of 1 teaspoon cinnamon and 1 tablespoon sugar generously over the top.
- Bake for 35-40 minutes until the topping is golden brown and the filling is bubbling vigorously.
- Let cool for at least 10 minutes before serving to allow the filling to thicken.
Notes
Keep butter cold for flaky biscuits. Do not overmix the dough. Frozen peaches can be used directly from the freezer without thawing. Let the cobbler cool for 10 minutes before serving to thicken the syrup. Can be made ahead and refrigerated for up to 24 hours before baking.
