Instructions

  1. Wash and hull the strawberries. Cut them into quarters or eighths.
  2. In a bowl, toss the strawberries with granulated sugar, lemon juice, and 1 teaspoon vanilla extract. Let sit for at least 15 minutes to macerate and create syrup.
  3. Place a large glass or metal mixing bowl in the freezer for 10 minutes to chill.
  4. Pour the cold heavy cream into the chilled bowl. Add confectioners’ sugar and 1 teaspoon vanilla extract.
  5. Beat on medium-low speed to incorporate sugar, then increase to high speed. Whip until stiff peaks form (about 3-4 minutes). Do not over-whip.
  6. Slice the pound cake into 1/2-inch thick slices.
  7. In a trifle bowl or individual glasses, create layers: start with a layer of cake, followed by strawberries with their syrup, and then dollops of whipped cream.
  8. Repeat the layers (Cake, Strawberries, Cream) three or four times, ending with a final layer of whipped cream.
  9. Cover the trifle with plastic wrap and refrigerate for at least 2 hours, or ideally overnight, to allow flavors to meld and cake to soften.
  10. Before serving, garnish with fresh mint leaves or extra strawberries. Serve chilled.

Notes

Keep all equipment and ingredients cold to ensure the cream whips properly. Do not drain the strawberry syrup; it adds essential flavor and moisture. The trifle is best made the night before. Do not freeze, as the whipped cream will separate upon thawing.
