  • ¼ cup almond flour or panko breadcrumbs (30g)
  • 1 teaspoon Old Bay seasoning or garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons oil (avocado or olive oil), divided
  • For Dipping Sauce (Optional): ½ cup plain Greek yogurt, 1 tablespoon honey, 1 teaspoon lemon juice, 1 teaspoon chopped fresh dill or parsley

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. Peel sweet potatoes and grate them using a box grater or food processor.
  3. Place grated potatoes in a cheesecloth or clean kitchen towel and squeeze tightly to remove as much moisture as possible. This step is crucial for crispiness.
  4. Transfer dried potatoes to a mixing bowl. Add grated onion, minced garlic, egg, almond flour (or breadcrumbs), Old Bay seasoning, salt, and pepper.
  5. Mix until well combined. The mixture should be damp but not wet.
  6. Shape the mixture into logs about 2-3 inches long using about 2 tablespoons per tot. Place on the baking sheet, leaving 1 inch of space between each.
  7. Brush the tops of the tots lightly with oil.
  8. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  9. Let cool on the baking sheet for 5 minutes before serving with dipping sauce.
