  • 1 store-bought angel food cake tube (1416 oz)
  • 2 cups heavy cream (cold)
  • 1/2 cup confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 4 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon lemon juice
  • Optional: Fresh mint leaves for garnish
  • Optional: Extra powdered sugar for dusting

Instructions

  1. Wash and dry berries thoroughly. Hull and slice strawberries; leave blueberries whole. Toss berries with lemon juice and let sit for 10 minutes to draw out juices.
  2. In a large bowl, combine cold heavy cream, confectioners’ sugar, and vanilla extract. Whip on medium-high speed until stiff peaks form. Set aside.
  3. Remove angel food cake from tube pan and gently tear into 1-2 inch chunks or crumbs.
  4. In a large glass trifle bowl, create layers: start with cake crumbs, then a layer of berries, then a layer of whipped cream. Repeat 3-4 times, finishing with a layer of cream on top.
  5. Refrigerate for at least 30 minutes (or overnight) to allow cake to soften and flavors to meld.
  6. Before serving, dust with powdered sugar and garnish with fresh mint or extra berries.

Notes

Keep all ingredients cold, especially the cream, to ensure it whips properly. Do not skip the lemon juice as it balances the sweetness. The trifle tastes better the next day as the cake absorbs the juices. Do not freeze as the texture will suffer. For a lighter version, substitute half the heavy cream with Greek yogurt.
