Description

A rich, creamy, and dairy-free weeknight curry made with just a few pantry staples. This plant-based dish combines chickpeas, spinach, and aromatic spices in a coconut milk sauce, ready in 20 minutes.


Ingredients

  • 1 tablespoon olive oil or coconut oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 1 can (13.5 oz / 400ml) full-fat coconut milk
  • 4 cups fresh baby spinach
  • 1 tablespoon fresh lime juice
  • 1 teaspoon salt, or to taste
  • Optional: 1 teaspoon red curry paste, 2 tablespoons coconut cream, ¼ cup fresh cilantro

Instructions

  1. Dice the onion and mince the garlic. Measure out spices and rinse chickpeas.
  2. Heat oil in a large skillet over medium heat. Add onion and cook for 3-4 minutes until soft and translucent.
  3. Add garlic and cook for 1 minute, stirring constantly.
  4. Add garam masala, turmeric, and cumin. Stir and cook for 1 minute to bloom the spices.
  5. Pour in chickpeas and coconut milk. Stir to coat and bring to a gentle simmer.
  6. Simmer for 5 minutes, stirring occasionally, until sauce thickens slightly.
  7. Reduce heat to low. Add spinach in handfuls and stir until wilted (about 2 minutes).
  8. Remove from heat. Stir in lime juice and adjust salt to taste.
  9. Serve immediately over basmati rice or with naan bread.

Notes

Use full-fat coconut milk for the best creamy texture. Rinse chickpeas well to remove starchy liquid. Bloom spices in oil before adding liquid for deeper flavor. The dish tastes even better the next day as flavors meld. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
